In these difficult economic times I am looking at some cheap, healthy, and good food ideas. One of my new favorites is warm white bean salad with fragrant garlic and rosemary from the afore mentioned The Splendid Tables' HOW TO EAT SUPPER (p116). The ingredients are simple and healthy: bread-crumbs, parmesan, salt, pepper, garlic, olive oil, rosemary, white beans, and salad greens. I soaked dried beans to make it even cheaper and it was super tasty. I went back for seconds and will be making it again soon. For those of you in a hurry it's only 10 minutes on the stove. I ate these with a side of roast turkey, but they could easily be a one bowl lunch!
